The Ceremony
Led by skilled chef Narito Ishii-san & Bar Wa's very own head chef Yosha Leewood, this traditional cutting ceremony honours both the fish and the fishermen who brought it to shore. Each cut reveals something new; from prized o-toro to lean akami.. while sharing insights into the traditions, techniques, and the journey from ocean to plate.
The Dining Experience
The evening will culminate in a curated dining experience that celebrates the versatility of tuna in Japanese cuisine. Guests can expect fresh sashimi, inventive courses, and bold flavours, all thoughtfully paired with Sapporo, Yebisu, and a selection of premium sake.
