Who’s ready for a Maibock?
It seems like we never stop hearing about our Maibock Lager. Even on the coldest days of the year, through the dark depths of the Fairbanks winter, we hear “can’t wait for the Maibock” and “Love that beer” so often that it never really leaves the HooDoo conversation. Well we’re happy to say that the day is near - and summer is HERE.
This year’s Maibock Lager, which is actually a blend of four 15-barrel batches, was brewed even earlier than usual. Time is a key ingredient in fine lager production, and we had the tank space to give the beer a couple of more weeks of lagering time. Natural, unfiltered craft beers continue to change and evolve over time and it seems that our Maibock just gets more satisfyingly tasty as the summer rolls on, so why not give it a little more time from the start?
Lovingly brewed in early March using the finest Weyermann malts from the heart of Germany, along with lightly spicy and floral Hallertauer Hersbruker hops from the fields of Bavaria, we then fermented this beauty with one of our favorite German lager strains. After a couple of weeks of fermentation, we lagered (aged) the brew in our cellar where the flavors intertwined, and the yeast continued to slowly “clean up” the beer, making it slowly but surely, more and more delicious.
We’ll release 2025 Maibock Lager at Noon on Saturday, May 17th - glass pours in the Taproom, plus kegs, growlers, and cans to take with you on all your adventures this summer.
Each year we team up with a talented artist to commemorate our Maibock release. For 2025, Liz Arthur from Chickaloon took on the project. Liz shared a concept for the Maibock that we immediately loved, and the finished work is beyond our expectations. Her piece will be unveiled in the Taproom on May 17th, and will adorn T-shirts, posters, stickers, a limited edition glass, plus our cans of Maibock Lager. All of the merch (not the beer) will be available at 11am on May 17th, then Liz will tap the first keg of Maibock at Noon!
