The first in a series of dinners celebrating local food initiatives, taco styles, and coming together as a community!
We’ll be making carnitas with pork from Old Timers Ag from Gibson City, served on red corn tortillas made with corn from Silver Tree Spirits. They will be paired with distilled spirits from Silver Tree Spirits, all grown and made in Paxton.
It’s not just local food, it’s a shared community loop to give back to the land. Spent grain from Silver Tree feeds the hogs, spent water from our corn nixtamalization process is mixed with spent water from Silver Tree to create a perfect fertilizer for the fields, and the cycle continues.
Tickets will be $60, which will include 3 courses, paired with cocktails made with and/or tasting sizes from Silver Tree Spirits, and a presentation about the process. We’ll all eat together and learn! Seating is limited to 60 people. Full menu coming soon.
Wednesday, June 18 at 6pm on the patio at Maize at the Station, 100 N. Chestnut, Champaign IL 61820. In case of rain, we’ll move into the Red Room.
