There’s a growing number of folks turning to wild game meat for a healthy, sustainable food source. Maine hunters and trappers have the opportunity to harvest a wide variety of game species from deer, bear and moose to waterfowl and small game. Plus, wild game is delicious and very versatile! But sometimes, you’ll end up with odd cuts, scraps, or meat that is a little tough or even slightly freezer burned that you may not be sure what to do with.
You worked hard to be successful, and we don’t want to waste any of these amazing resources, and for this reason, we have created this unique workshop opportunity to help you to fully utilize your harvest and re-imagine cuts you may have overlooked. We always seek ways to fully utilize anything harvested, and this workshop will broaden your skills and imagination on ways to put food on the table.
Making Sausage Using Your Wild Harvested Game:
In this workshop, we’re going to make various versions of sausage with or without casings. Check your freezer and see if you still have some ground meat (burger) or other wild game meats available. (Slightly freezer-burned is just fine for making sausage.) This workshop will have you preparing, seasoning and stuffing your own sausages that you can take home and enjoy with family and friends.
We provide the instruction and equipment for trimming, grinding, mixing, seasoning and stuffing your sausages. You’ll only need to bring some meat from your freezer. We may have some meat to help supplement. Ground, burger, basic sausage, stew meat, round steaks and other large muscle meats will work well. Lower legs of turkeys and shanks from other game are not great for sausage. You can also incorporate heart and liver if you have some available. We will provide back fat to mix in, along with an array of seasonings and recipes. We’ll cover best practices, how to store, safe sanitation and clean up. Gloves will be provided.
Stuffing sausages is best done with 2 people, so we encourage groups of 2 or more to sign up. Families are welcome. Instructors will pair individuals with anyone who needs a partner to work with. Please register ALL that plan on attending.
