Boldly crossing borders, we will discover a new world by immersing ourselves in the atmospheres of Antarctica, Africa, Asia, Australia, South America, North America, and Europe—through tastes, aromas, and emotions.
For Daniel this dinner is not just about food; it’s a journey that unites different cultures, broadens horizons, and allows everyone to feel how culinary art can bring the world together and reveal its grandeur.
“Taste of the Planet: 7 Continents. 7 Stories. 7 Emotions” is my personal interpretation of every corner of the world I’ve visited and each continent that has inspired Daniel to create this dinner.

• The event will take place in Estonia only once and is limited to 30 guests

Antarctica – Cold and Purity
Scallop ballotin, spirulina crash ice with cauliflower and horseradish
Fermented cucumber juice, sea water gel, burnt leek oil
Australia and Oceania – Wild Nature
Australian beef tartare with roasted sweet potato, plum sauce
Crispy macadamia, thyme, lime and parmesan, crispy onion
Asia – Salt and Depth
Tuna tataki with lemongrass dressing, black garlic, pak choi
Onion cream, burnt butter and soy, rice chips with miso aioli
North America – Modern ClassicCanadian lobster with herb butter, shellfish, asparagus and potato soup in white wine
Africa – Spice
Lamb ragout with Moroccan spices and herbs, zataar flatbread
Yogurt cream with herbs
South America – Passion and Brightness
Beef steak with chimichurri, yuca/cassava chips, tomato salsa
Fried jalapeño cheese, rice popcorn
Europe – Home and Tradition
Creme brulee with bourbon vanilla, tonka and lemon, raspberry sorbet
