CHEESE & WINE PAIRINGS
Marigold / Sauvignon Blanc
Nestled in the heart of Oley Valley in Southeastern Pennsylvania, this gem of a creamery crafts exceptional cheeses with care and passion. Working directly with Kerith Brook Farm to source organic, grass-fed milk, cheesemaker Stefanie Angstadt fell in love with the region—and brought her deep expertise and dedication to every wheel she creates. The result is a gorgeous, fruity, and grassy cheese with a long, tingly finish that beautifully captures the character of the land it comes from.
Pleasant Ridge Reserve / Rosé
The most awarded cheese in American history — and for good reason. Crafted from grass-fed milk, it’s incredibly sweet with a savory depth imparted by its natural, lightly washed rind. Rich, complex, and beautifully balanced, this cheese delivers a salty, lingering finish with notes of fruit that unfold long after the first bite.
Rockets Robiola / Pinot Noir
With a dynamic, ever-changing ashed rind, this luxurious wheel offers flavors reminiscent of full-fat yogurt, butter-poached mushrooms, and toasted almonds. As it ages, it transforms beautifully—from firm and delicately chalky to lush, creamy, and irresistibly oozy—revealing new depths of flavor and texture with every stage of maturity.
Mountaineer / Cabernet Sauvignon
Salty, meaty, and delightfully crumbly, this 4–5 pound wheel is crafted in traditional Manchego-style basket molds, giving it a beautifully textured, slightly oily rind. Full-bodied and rich with the unmistakable character of sheep’s milk, it offers a savory, herbaceous flavor that lingers on the palate. Perfect for snacking with cured meats and a glass of wine—this cheese is crumbly, salty, and irresistibly delicious.
