Roasted Bone Marrow & Caponata
Fire-roasted bone marrow served with Sicilian caponata, Castelvetrano olives, tangy feta, and crispy capers. Accompanied by toasted crostini for a rich, savory spread.
This bubbly Mourvèdre is a standout pairing for the roasted bone marrow dish thanks to its unique combination of smooth red-purple fruit, subtle spice, and lively effervescence. The wine’s vibrant CO₂ lifts the richness of the marrow, scrubbing the palate clean after each decadent bite. Its notes of white pepper and baking spices enhance the savory-sweet caponata and complement the earthy, briny elements of Castelvetrano olives and crispy capers.
Scallop Crudo
Delicately sliced raw diver sea scallops paired with crisp water chestnuts, a bright and savory blend of ponzu and smoked shoyu, and a garnish of vibrant microgreens. The dish is clean, refined, and layered with subtle umami, citrus, and herbal notes, offering a balance of texture and freshness.
Paired with the White Mourvèdre "Vin Gris", this wine brings an exotic, aromatic profile of pear, melon, pineapple, and lemon blossom that mirrors the brightness of the ponzu and the natural sweetness of the scallops. Its medium, plus acidity cuts through the richness of the raw seafood, while the wine’s floral and fruit-forward character complements the delicate flavors without overwhelming them. Hints of elderflower and citrus peel elevate the herbal notes of the microgreens, and the crisp, dry finish refreshes the palate between bites. This pairing creates a beautifully balanced interplay of texture, brightness, and elegance.
Smoked Duck with Caramelized Onion and Plum Jam

Enter The Deputy, our 2022 Mourvèdre a wine as intriguing as it is approachable. With a medium purple hue and an aromatic blend of plum, melon, florals, and spice, it complements the duck’s smoky, savory profile while echoing the sweet plum and caramelized onion in the jam. The wine’s medium-plus acidity lifts the richness of the dish, while its full body and integrated structure match the duck’s weight without overpowering it. Low tannins and smooth, earthy finish tie it all together.
Summer Berry Cobbler
This comforting finale features a summer berry cobbler, bursting with seasonal berries and baked under a golden, buttery crust. Paired with the 2021 Sweet Sarah Port, this Syrah based ruby port-style wine elevates the cobbler with its vibrant yet restrained sweetness. The wine’s dessert level sweetness without being syrupy allows the pairing to feel balanced, not cloying, while its notes of fruit leather and hints of chocolate bring a touch of decadence.
