Meet farmers Matt and Danielle Ghosn from Eagle View Truffles immersing yourself into the magnificent journey of how they produce the Périgord black truffle. Then let your senses be delighted with a rich truffle-infused paddock-to-plate dining experience of a 7-course degustation set menu paired with aged wines, exclusively designed and prepared by Fay Waters.
Fay is a passionate chef and professional Sommelier, who also has a primary production background on Ngunnawal country, producing: beef cattle, fat lambs and cereal crops. Fay brings a deep understanding of food provenance to her cooking. Her menu is elegantly paired with fine wines, selected to elevate each course and enhance the umami flavours of the truffle. Throughout the evening, Fay will guide you through each pairing, sharing her rich culinary knowledge, including the use of Indigenous Australian bush tucker.
This unique and educational culinary experience is an opportunity for you to refine your palate, sharpen your sensories and gain insights into the primary production of the prized Périgord black truffle from paddock to plate with the knowledge that the ethos and sustainability brought to you through this experience are thoughtfully curated.

Single Event Ticket to the Watsons Bay Truffle Degustation 9 August 2025 5pm – 8:30pm, Sydney Game Fishing Club, Marine Parade, Watsons Bay (the building at the end of the Watsons Bay Ferry Wharf).
Ticket price includes a 7-course degustation set menu for one person and educational information for the full culinary experience (GST included). Wine pairings and tasting notes are included in the full experience ticket price and is highly recommended so you receive the complete unique and guided culinary experience. However, if you do not drink wine you can select the ticket option to opt out of wine pairings. The Sydney Game Fishing Club is a licenced venue and will have their bar opened for the event so there is no BYO alcohol allowed. Soft drinks, beer and spirits can be purchased from the bar during the event. It is highly recommended if you would like to drink wine that you select the wine pairing option to gain the full culinary experience of aged wines to complement the full degustation menu and enjoy the full guidance and teachings from Fay Waters, a professional Sommelier.

Parking in Watsons Bay can be limited during peak times although given this event is in winter, parking should be attainable although is not guaranteed. Watsons Bay is easily accessible by car, taxi or ferry.
