She was born in Mexico City and grew up in Cuernavaca. She came to Iceland to work at Dill and has now been here for a year.

Catherine is a professional Health-Supportive Chef (Institute of Culinary Education) and a Certified Health Coach from the Institute for Integrative Nutrition in New York.
Originally from Mexico City, she is passionate about blending her deep-rooted Mexican heritage with contemporary cooking techniques to create vibrant, nourishing, and flavorful dishes. She is dedicated to sharing her approach to healthy food and modern Mexican cuisine with the world.
Throughout her career, Catherine has had the privilege of working in some of the world’s most renowned Michelin-starred restaurants, including Gucci Osteria da Massimo Bottura in Beverly Hills, Hiša Franko in Slovenia, Kato in Los Angeles, and Dill in Iceland. These experiences have allowed her to refine her craft and master the balance of flavors, ingredients, and techniques that elevate a dish to its highest potential.
Catherine’s cooking philosophy centers on her Mexican culture and a commitment to using fresh, seasonal ingredients to create dishes that are both delicious and nourishing. She believes food should be a source of joy and connection—and that with the right approach, anyone can feel confident cooking, hosting, and sharing meals with others.
