One of our favorite cakes to make during the holiday season is a traditional Bûche de Noël cake. Bûche de Noël is a lovely holiday classic for the French, made during Christmas Eve. Here In America, we know a Bûche de Noël as a yule log cake. It is a decadent chocolate sponge cake, filled with cream, topped with ganache and decorated to look like a wooden log with edible, nature inspired confections.
In class, you will learn the entire process of making this beautiful Bûche de Noël, including:
•Techniques of making and rolling a delicate sponge cake
•Making cake filling and ganache from scratch
•Making, piping and baking meringue mushrooms
•Making sugared cranberries and rosemary
•Making chocolate edible pinecones
