On the night, weβll be pouring Rais (2023); a white pΓ©t-nat from winemaker Diego Bongiovanni, grown on the northeastern slopes of Mount Etna. Made from hand-harvested Nerello Mascalese, this direct-press sparkling white is crisp, dry, and bursting with volcanic character. Fermented with native yeasts and bottled unfiltered, itβs bright, slightly wild, and totally alive.
Farmed organically with some biodynamic principles, the grapes grow in mineral-rich volcanic soils, giving Rais its lift, texture, and edge. No fining, no filtration, no added nonsense. Just fruit, fizz, and feeling. A pure, joyful pΓ©t-nat that begs for a great record and a summer evening.
