Rum & Dine at Sails Cairns

Set sail for an evening of tropical indulgence as Sails presents Rum & Dine — a four-course degustation paired with handcrafted rum cocktails from Devils Thumb Distillery, produced right here in Far North Queensland.
This one-night-only menu is where coastal cuisine meets the spirit of the tropics:
• Flame-grilled Jerk Chicken Skewer with pineapple salsa · Piña Poquita — pineapple rum, coconut, lime.
• Salmon Tiradito with tropical tiger’s milk, avocado, and crispy calamari · Passionate Punch — cane spirit, passionfruit, apricot, lime.
• Slow-cooked Pork Belly with plantain mash and chilli molasses glaze · Devil’s Daiquiri — spiced rum, cinnamon, lime.
• Banana Flambé with candied orange, rum glaze, and vanilla ice cream · Banana Bonanza — banana and pineapple rum, orgeat, lime.
