Come and learn how to make your very own traditional soy bean miso in this introductory class.
In the 2.5hr session you will learn all about Japanese miso; what it is, how to use it and how to make it, with a jar of miso to take home with you.
You will also learn about koji, a mould used to make miso and other Japanese condiments such as amazake, shio koji, soy sauce.
There'll be demos of how to make both amazake and shio koji with lots of tasters throughout the morning too.
Why miso?
Miso is a Japanese bean paste traditonally made with soy beans, koji mould and salt (although any protein source will make a similar amino paste).
Koji mould breaks down sugars, proteins and fats unlocking nutrients and a whole host of incredible flavours like umami.
Miso can be used in soups, stews, marinades, stir-frys, baking or even icecream!
