Who doesn't love a soft, springy slice of fresh mozzarella? Or, how about a smooth, blissful spoonful of creamy ricotta? Well - why choose? Come learn to make both in this two-for-one class!
At first glance, it's hard to imagine that mozzarella and ricotta could have much in common with each other... but believe it or not, they do! In this class, we will learn the similarities these two "cousins" of the cheese world have in common, as well as some very important differences. We will also make both of these cheeses in class, and enjoy sampling them with traditional pairings such as tomato, basil, & olive oil (a common presentation for mozzarella - think "caprese salad"), and with dried herbs & garlic (a typical presentation of ricotta - think Boursin dip/spread on toast)... but we will also try them with not-so-typical pairings (how about sliced mozzarella with strawberries and honey? or ricotta with fruit preserves, sliced almonds and a dusting of cocoa sugar?? Mind blown!)

• Detailed descriptions and examples of the tools and equipment needed for making mozzarella and ricotta cheeses
• Where to find cheesemaking supplies & ingredients, and how to find & select quality milk for successful cheesemaking
• What exactly is pasteurization...? homogenization...? how do these affect milk and its ability to become (or not become) delicious cheese
• Some additional helpful scientific tid-bits about what's going on inside your milk when making cheese, and how to troubleshoot if it doesn't turn out how you expected
• Detailed handouts and recipes to take home and use for making mozzarella and ricotta at home
• Samples of both cheeses in traditional and non-traditional pairings and presentations
• A visit with the animals on the farm!
