Join us at 7 Course Chef’s Table at The Forks on 8/31/25
This dinner is all about bold and wild flavors. Duck, buffalo, elk, boar, and more are prepared with intention and served with warmth. It is a rich and satisfying meal that highlights game meats and fire driven cooking, paired with sides and sauces that complement without overcomplicating.
The menu is structured but relaxed with well paced courses and a few surprises. It is hearty, elevated, and meant for people who appreciate good food and a unique experience.
$150 per person includes the full seven course tasting menu.
Optional wine and bourbon pairings will be available to complement each course for an additional charge.

First Course ~ Pan Seared Duck Breast
Served with a wintery salad and lingonberry demi glace.
Second Course ~ Buffalo Pâté
Delicately seasoned and garnished with black truffle and green peppercorn. Served with roasted vegetable salad and plum sauce.
Third Course ~ Wild Chilli
A slow simmered blend of wild game, beans, vegetables, and aromatic spices. Finished with aged white cheddar and hearth bread.
Fourth Course ~ Baby Lettuce Salad
Tossed with roasted vegetables, onion, tomato, and carrot in an apple cider vinaigrette. Finished with smoked pheasant, chèvre, and toasted pecans.
Fifth Course ~ Huckleberry Sorbet
A refreshing interlude with bright wild berry flavor.
Sixth Course ~ Mixed Grill
BBQ quail, elk medallion, and wild boar sausage with smoked juniper demi glace. Served with herb mashed potatoes and grilled corn.
Seventh Course ~ Flourless Chocolate Chunk Cake
Served with raspberry coulis, fresh raspberries, and vanilla Chantilly.
