Taikun Omakase Maguro Kaitai Ceremony / Bluefin Tuna Carving

Taikun celebrates two years at The Ritz-Carlton, Laguna Niguel. After its tremendous success bringing a modern 16-course+ omakase experience to Orange County, we decided to extend its "restaurant in residency" ongoing. A menu refresh will include the finest and freshest cuts of fish and other Japanese delicacies, presented in the speakeasy-style chef's counter tucked away on the lobby level of the resort.

In celebration and on Sunday, June 8 from 5–7 PM, Chefs Kei Yoshino and Yasushi Iwai invite the public for a rare and intimate bluefin tuna carving ceremony, traditionally known in Japan as Maguro Kaitai, followed by a curated tasting experience at our rooftop bar, 180Blu. Guests will witness the precise process of slicing cuts of the 250 pound tuna, with the chance to learn and taste different cuts, varying in fat and delicacy. While overlooking miles of the Pacific Ocean, guests will enjoy four courses highlighting the finest cuts of bluefin, paired with a glass of premium sake or sparkling wine.
