Cooking Wild with Chef Troy: Montana Antelope!

For this cooking demo, we will start with a modern twist on Ceviche. Chef Troy will show us his version of this classic colorful dish using Pacific Northwest wild seafood. The main event ... Sopa de Albóndigas con Antelope. Chef will show us how to create the classic deep-rooted Mexican dish with an American twist. We will prepare this dish with antelope from our sister state Montana. We will work with open-range antelope and exotic chiles to create a rich stew with all of the accompaniments. To finish our night, Chef Troy will serve us Street Churros with a Spiced Chocolate Dipping Sauce.
