Join us in the Lab and meet author Pooja Bavishi as she celebrates her new cookbook, "MALAI"! Pooja will share what it was like to create her beautiful cookbook, and the intricacies of the frozen desserts inspired by South Asian flavors and recipes (plus, you'll be able to try two of the delicious sweet treats, Pistachio Soan Papdi Kulfi Pops and Cardamom Snickerdoodle Rose Ice Cream Sandwiches, for yourself!)

From ice cream bars and cones to pies, cakes, and cookies, this storied collection of 100 recipes will transform your desserts into sweet, spiced, and flavorful frozen treats. Pooja Bavishi, founder of the acclaimed Brooklyn-based ice cream company Malai, celebrates her first-generation Indian American heritage by combining vibrant South Asian spices with the classic indulgence of ice cream. For the first time, Bavishi shares the secrets behind Malai’s beloved flavors, including Rose with Cinnamon Roasted Almonds and Coffee Cardamom. Discover how to make Malai’s famous Orange Fennel French Toast and Parle-G Masala Chai Ice Cream Sandwiches.

Pooja Bavishi is the founder and CEO of Malai, an acclaimed New York–based ice cream company specializing in innovative flavors infused with traditional South Asian ingredients. Inspired by the spices of her childhood—ginger, rose petals, fennel, saffron, cardamom—Pooja opened Malai in 2015 to offer a unique ice cream experience that blends her rich culinary heritage with everyone’s favorite frozen dessert.
