Native Barbeque Cooking with Chris Jordan
Join celebratory chef Chris Jordan for a hands-on Native BBQ cooking class where you’ll celebrate the unique flavours of native Australian ingredients and learn how to cook an unforgettable summer feast.

We’ll begin with a guided walk through the beautiful gardens at City Farm. Learn to identify seasonal bush foods, hear their traditional uses, and discover how they can elevate your backyard BBQ, Christmas spread or summer party cook-up.

What will you be learning to cook?
Back at the grills, you’ll learn how to cook a lineup of dishes using native herbs, meats, and seasonal produce.
- Oysters cooked on coals with native thyme oil
- Charred kangaroo loin with saltbush
- BBQ fish with seaweed butter
- Salt-baked root vegetables
- Spring salad with wattleseed vinaigrette
- Burnt pineapple & saltbush virgin margarita

So, for a deliciously different festive season come along and learn with one of Australia's top first nations chefs. Perfect for summer barbeques, you will impress your friends and family using the native abundance from our region. And Chris will email his recipes to you as well!

More about your teacher Chef Chris Jordan, Three Little Birds
Chef Chris Jordan connects with his First Nations ancestry through cooking with native ingredients and has family connections to Kamilaroi country. Through his business Three Little Birds, Chris explores conceptually and gastronomically issues such as Indigenous food sovereignty, cultural dispossession and climate change. Three Little Birds collaborates with Kuppibunda Kitchen and ReKindle to provide native food industry education and opportunities to young people in detention. Three Little Birds also offers native food education in high schools across Queensland. Chris is frequently showcasing native foods in the mainstream media and has recently appeared on Channel 9 TV and SBS TV's 'The Cook-Up with Adam Liaw'.
