I. STARTERS
- Potato Leak Soup: A silken puree of estate-grown potatoes and slow-melted leeks, finished with roasted garlic cream and crispy potato skin "hay."
- Classic Caesar Salad with Herb brioche croutons and shaved parmesan
- Winter Arugula Salad: Candied walnuts, farm apples, and gorgonzola with a champagne vinaigrette.
II. APPETIZERS
- Grilled Spanish Octopus served with crispy potato, smoked pimento aioli, and pickled jalapeños.
- Gruyere Arancini Risotto with truffled mushroom puree, parmesan, and arugula.
- Filet Tartare Hand-cut beef with capers, pickled mustard seed, red onion, and garlic aioli.
III. MAINS
- Filet Mignon Center-cut beef with a mushroom demi-glace, roasted broccoli, and herb mashed farm potatoes.
