Cook This Cut is a hands-on, no-intimidation workshop taught by Chef & Rancher April Rivas of Rivas Ranch.
We’ll walk through the major parts of the cow, show you where the cuts come from, explain how to cook them, and actually get in the kitchen so you can taste the difference yourself.
You’ll learn how to turn a Quarter, Half, or Whole Beef into meals that make sense for your lifestyle — busy families, foodies, and anyone who wants to cook smarter, not harder.

April is classically trained at the Culinary Institute of America and spent years cooking in the San Francisco Bay Area’s high-pressure, flavor-driven restaurant scene before trading stainless-steel kitchens for pasture gates and muddy boots.
As a first-generation rancher with deep Mexican-American roots, she brings together the two worlds that shaped her — heritage cooking and hands-on livestock stewardship.
Her approach is simple:
Teach people how to cook with confidence, honor the whole animal, and bring real flavor back into everyday meals.
Expect chef-level knowledge delivered in a way that feels approachable, fun, and just sassy enough to keep things interesting.
The class is proudly hosted in partnership with Jeff Hannah of Hannah Family Farm, a multi-generational cattleman and land management expert whose family roots run deep in North Carolina soil.
Jeff brings decades of practical ranching knowledge — the kind you only get from growing up in the pasture, fixing what breaks, raising animals with intention, and understanding how good land stewardship creates good food.
His expertise in pasture-based cattle, soil health, and regenerative principles makes him the perfect collaborator for this workshop.
Hannah Family Farm is the home of the event, and Jeff’s role bridges the gap between the ranch, the land, and the beef on your plate.
