About the event

Cook This Cut: Whole Beef Cooking Class
Bulk freezer beef feels intimidating? That’s the problem. Learning every cut in one class is the solution.

About this Event

Overview

If you’ve ever been told “stock your freezer, buy in bulk, you’ll save money,” and then immediately thought…
“Okay, but what do I do with all this beef?”
This class is for you.

Cook This Cut is a hands-on, no-intimidation workshop taught by Chef & Rancher April Rivas of Rivas Ranch.
We’ll walk through the major parts of the cow, show you where the cuts come from, explain how to cook them, and actually get in the kitchen so you can taste the difference yourself.

You’ll learn how to turn a Quarter, Half, or Whole Beef into meals that make sense for your lifestyle — busy families, foodies, and anyone who wants to cook smarter, not harder.

You’ll learn:

  • What the primary cuts are and where they come from
  • How to cook each one so it turns out tender and flavorful
  • Which cuts stretch your budget without sacrificing quality
  • How to plan meals straight from your freezer without overwhelm
  • Real-world, chef-taught tips you can use immediately

This is approachable, practical, fun, and you’ll leave confident cooking every cut that shows up in your box.

Who This Class Is For
  • Busy families wanting easy, reliable beef meals
  • Home cooks ready to get comfortable with whole-animal cooking

  • Tastings of multiple cuts + cooking methods

Why We’re Hosting This

Because buying in bulk isn’t the hard part.
It’s knowing how to cook everything inside the box.

This class takes the fear, guesswork, and “Pinterest panic” out of it.
You’ll leave confident and excited to cook every cut — from everyday meals to weekend showstoppers.

About Your Instructors & Host
Chef April Rivas — Rivas Ranch

Chef, rancher, culture-carrier, and the woman behind Rivas Ranch.
April is classically trained at the Culinary Institute of America and spent years cooking in the San Francisco Bay Area’s high-pressure, flavor-driven restaurant scene before trading stainless-steel kitchens for pasture gates and muddy boots.

As a first-generation rancher with deep Mexican-American roots, she brings together the two worlds that shaped her — heritage cooking and hands-on livestock stewardship.
Her approach is simple:
Teach people how to cook with confidence, honor the whole animal, and bring real flavor back into everyday meals.

Expect chef-level knowledge delivered in a way that feels approachable, fun, and just sassy enough to keep things interesting.

Jeff Hannah — Hannah Family Farm

The class is proudly hosted in partnership with Jeff Hannah of Hannah Family Farm, a multi-generational cattleman and land management expert whose family roots run deep in North Carolina soil.

Jeff brings decades of practical ranching knowledge — the kind you only get from growing up in the pasture, fixing what breaks, raising animals with intention, and understanding how good land stewardship creates good food.

His expertise in pasture-based cattle, soil health, and regenerative principles makes him the perfect collaborator for this workshop.

Hannah Family Farm is the home of the event, and Jeff’s role bridges the gap between the ranch, the land, and the beef on your plate.

Refund Policy

Tickets are non-refundable due to limited seating and class prep.
If weather affects the event, all registrations will be transferred to the backup date automatically.
