Rassolnik (Рассо́льник) is one of the three iconic soups in Russia. Due to the harsh winter conditions in the region, there are many delicious pickled products available locally. This Rassolnik soup is renowned for its rich and distinctive combination of pickled cucumbers, pearl barley, and various vegetables. The choice of meat varies by region and household, sometimes using beef and other times using chicken. It is typically served with sour cream, creating a unique blend of sweet, sour, and savory flavors, along with a delightful texture and aroma.
