In this immersive class, you’ll make delicate ravioli from scratch, filled with a rich blend of goat cheese, caramelized onions, Parmesan, and a touch of nutmeg.
The dish is taken to the next level with a red wine and morel mushroom reduction, infused with thyme and a hint of honey for perfect balance. You'll also learn how to create deeply flavorful brown butter and fry sage leaves into crisp, aromatic garnishes.
To finish, you'll plate your ravioli with chef-inspired finesse—highlighting shaved Parmesan, earthy morels, and optional microgreens for a polished final presentation.
By the end of class, you'll not only enjoy your beautifully crafted ravioli, but leave with the techniques and confidence to recreate it at home. Expect to get flour on your hands, practice classic techniques, and leave with a new appreciation for the craft of pasta making.
