Take a look at Colonial cookbooks at the Library of Congress from the middle of the 18th century, through the American Revolution, and on to the end of the century. It is during this crucial period that Amelia Simmons publishes the first cookbook intended specifically for Americans, using ingredients available in the colonies. Free to the public.
