PARTICIPATING WINERIES
Mirador Winery will offer a unique "Hallo-Wine on Omo" experience where guests can witness and learn about the spooky-looking, yet entirely natural, phenomena of fermentation. During the event, the Mirador winemakers will guide guests through the winemaking process and explain why the fermentation vats take on such a mysterious and eerie appearance. Visitors can observe several phenomena that contribute to the Halloween-like atmosphere:
• Bubbling vats: The yeast consumes the sugar in the grape juice, converting it into alcohol and carbon dioxide (CO2). This process causes the tanks to bubble and churn continuously, like witches' cauldrons.
• Grape "cap": For red wines, the grape skins, seeds, and stems rise to the surface, creating a thick, solid layer known as the "cap". Winemakers must frequently "punch down" this cap or "pump over" the juice to ensure maximum color and flavor extraction, which can make the cap appear to move on its own.
• Misty fog: We use dry ice to cool the grapes at the beginning of fermentation. As the dry ice sublimates into gaseous CO2, it creates a thick, low-lying fog that adds to the otherworldly atmosphere.
• Settling lees: After fermentation is complete, the dead yeast cells and other solid particles sink to the bottom of the vat. This cloudy sediment, called "lees," can give the illusion of a murky, haunted brew at the bottom of the vessel.
• Mirador will be serving “zinful”street tacos and Halloween sangria along with our regular wine tasting menu.
