Chili Cook-Off Rules
Three categories (bean, no bean, wild card)
Rewards for 1st in each category ($100 each) and People's Choice ($200).
1. Registration the day of contest - $25 per recipe submitted. To be paid to the COCI Treasurer (Cash or Check)
2. ALL ingredients MUST be un-cooked prior to the event.
a. Meat (to include Wild Game) may be marinated (not cooked or par-cooked).
b. Beans may be pre-soaked (if using fresh beans).
3. Chili can be Red, Green or White AND prepare at least 2 Gallons.
4. Cooks ARE allowed to pre-chop and premeasure all ingredients.
5. Cooks MUST supply their own cooking setups, utensils, and supplies.
6. Each cooking station MUST have a) Hand Sanitizer; b) Disinfectant for preparation surfaces; c) plastic gloves for serving. Additionally, hats must be worn for those cooking and serving.
7. If peanut or peanut oil is used, warning signage must be displayed.
8. Teams are allowed to give samples of their chili to others EXCEPT Judges, in small cups (provided by the team).
9. Chili must be covered by lid, when not serving.
10. Chili must be ready for judging by 12pm.
11. Quantity for judging: One Pint (16 oz.) cup will be supplied to the team prior to collection at 12pm.
Judging
- Judges must abstain from inspecting or tasting chili prior to judging.
- Judging criteria and scoring - A single score takes into consideration the five criteria for:
o Aroma
o Flavor
o Texture
o Taste
o Aftertaste
- Scoring - Each cup of chili will be scored on its own merits with a whole number from 0 to 5, 5 being the highest.
