A slow-cooked barbecue prepared on a parrilla over a charcoal fire. Cuts include beef ribs (tira de asado), flank (vacio), and skirt steak (entraña), griiled chicken ( pollo asado )along with sausages (chorizo), (morcilla), and even sweetbreads (mollejas). The experience emphasizes simplicity, with minimal seasoning and the signature flavor coming from the smoky wood fire and often accompanied by a tangy chimichurri sauce.
