Join us for a one-night-only dinner where Southern fire meets Islay smoke. Four bold courses. Four rare single malt Scotch pours. Stories, flavor, and depth—guided by Kilchoman brand ambassador Emma McHarrie.
Kilchoman is a true farm distillery on the rugged coast of Islay, Scotland—growing their own barley, malting on-site, distilling and aging just steps from the sea. Known for its elegant peat smoke and layered complexity, Kilchoman is one of the few independently owned single malt Scotch whisky distilleries in Scotland—and it shows in every pour.
Emma McHarrie grew up just across Loch Gorm from the distillery. Her family works across nearly every part of Kilchoman, and she brings the kind of firsthand knowledge, storytelling, and charm that turns great whisky into something unforgettable.
This menu isn’t just about pairings—it’s a meeting of two places that know how to do smoke and soul—Islay, Scotland, and the American South. Each course was designed to complement (and sometimes challenge) the unique character of the whisky it’s served with.
One brings peated single malt Scotch whisky, layered with salt air and oak. The other brings bold, fire-driven cooking with depth and heat. Each dish was designed not to mimic the whisky—but to respect it, challenge it, and bring something bold to the table.
Course One – Kilchoman Machir Bay
Cajun smoked beef crostini
Creole remoulade, charred green onion relish, whisky butter, microgreens
Course Two – Kilchoman Sanaig
Apricot-glazed chicken roulade
Cornbread and wild rice stuffing, glace de volaille, pickled watermelon radish
Course Three – Kilchoman Sauternes Cask Finish
Crawfish and lobster étouffée vol-au-vent
Holy trinity, Sauternes sauce, puff pastry, bayou tuile
Course Four – Kilchoman Loch Gorm
Creole sweet potato pie tartlet
Loch Gorm filling, whipped cream, candied pecans
Emma McHarrie is the U.S. Brand Ambassador for Kilchoman Distillery. Born and raised just across Loch Gorm, she’s been part of the Kilchoman story from the beginning—her family works across nearly every part of the distillery. Emma brings deep whisky knowledge, Islay charm, and plenty of behind-the-scenes stories to every tasting she leads.
