Earlier in the day, you’ll be a happy camper when you sit down at the long table for Chef Thomas Bille’s meal. And you’ll understand why he’s been named the 2025 James Beard award winner for Best Chef-Texas. It’s all happening at Rancho Pillow, a unique 20-acre compound set among the farms and ranches of southeast Texas near the tiny art town of Round Top, Texas. Fun, funky and elegantly quirky, this whimsical wonderland is the creation of our host, owner and designer, Sheila Youngblood.
