Preserving for Beginners: The Science of Freezing Food
Learn the science behind preserving flavour, texture, and nutrients when freezing your summer harvest to make it last year-round!

About this Event

Part of our Preserving Series, this workshop will teach you the basics of freezing fresh fruits, vegetables and herbs so that you can eat fresh and local year-round. Freezing fresh produce preserves much of it's nutritional quality, flavour and texture without the addition of any salt or sugar!

We'll cover:

  • The science behind freezing as a preservation method.
  • How to blanch foods before freezing, and why this is important!
  • Best practice + ideas for prepping and packaging different foods for storage
  • Vacuum sealing 101
  • Labeling, organizing, and defrosting safely

Bring your apron and your curiosity!

Instructor: Hilary Prince, Chef & One Straw Society Event + Education Coordinator

Hilary is a pastry chef based in Halfmoon Bay on the Sunshine Coast. With a background in science and love for all things creative and hands on, she has been cooking and baking professionally for over 20 years. She began her cooking career as a part time job while attending university in Montreal. Drawn to the bustling energy and creativity found in kitchens, she continued cooking (and baking!) after graduating with a degree in Biology and has never looked back. Over the course of her career she has worked in Montreal, Vancouver and continues to pursue her passions on The Sunshine Coast, where she settled with her family in 2020.
