We are proud to present our next Palooza instalment. We have teamed up with WA's own Futari Wagyu, and will be showcasing their amazing Wagyu beef in a three course dinner, for one night only!
Direct from the Great Southern, Futari Wagyu produce some of Australia's best Wagyu. The company is family owned and operated with a focus on customer service. Past winners of Gold Medals in the Australian Wagyu Awards, the Australian Delicious magazine produce awards and Perth Royal Show awards, Futari Wagyu are in the upper echelon of Australian Wagyu.
The secret behind Wagyu being the ‘world’s luxury beef’ lies in its unique marbling. Marbling refers to finely dispersed, visible fat found between muscle fiber bundles within the meat, enhancing its juiciness, tenderness and flavour.
The Australian Aus-Meat marbling scale ranges from 0 to 9+, with 0 being the lowest and 9+ being the highest and most valuable. Australian Fullblood Wagyu typically achieves an average Aus-Meat marble score of 8, over three times higher than other breeds. Futari Wagyu regularly reaches marbling scores beyond 9+, which cannot be scored further by the Aus-Meat grader but are often in the realm of up to 13 or higher.
Futari Fullblood Wagyu Marble Score Labels:
Gold - Marble Score of 4-5. Platinum - Marble Score of 6-7. Signature - Marble Score of 8-9. Luxury A5 - Marble Score of 9+.
