Fermentation is not only great for improving gut health and preserving excess garden produce, it allows you to explore the world through traditional recipes and unlock a world of new flavour too!
In this hands-on workshop your instructor Tim will share the process of Lacto-fermentation and how to do it step by step at home.
In this 2.5hr workshop Tim will cover:
- Overview of the Lacto-fermentation process
- How to ferment safely and what to watch out for
- Basic equipment to acquire
- Hands-on making of German Sauerkraut, Korean Kimchi and Salvadorean Curtido
- Suggestions and inspiration for other delicious ferments to try at home
- Tastings of the above and other fermented products
Leave with a jar of Sauerkraut, Kimchi, or Curtido and the recipes, knowledge and confidence to make much more at home.
Most equipment and materials are provided, but please bring a few wide-mouth clean glass jars for your products.
- Meet Tim -
Tim Greaves has 24 years of experience as a chef in Australia and the U.K., focused on European and Modern Australian Fine Dining. These days he focuses on sharing his skills as a teacher and running his hot sauce business 'Foraged Fire.' Tim is passionate about sustainability, minimising waste and sourcing and eating locally and an obsessive forager, fermenter and home gardener.
