Join Maria of Mestizo Academy for hands-on cooking classes that explore the bold flavours and rich traditions of Mexican cuisine. Each small-group session includes cooking, tasting, and take-home recipes. Offered in English and Spanish.

Learn to prepare this festive centerpiece the traditional way—stuffed with ground meat, dried fruits, and nuts, then infused with white wine, butter, and Mexican spices for a rich, aromatic finish.

Blending colonial and Indigenous traditions, this dish combines European-style roasts with bold Mexican flavors. In this hands-on workshop, we’ll focus on seasoning, stuffing, and marinating. You’ll also get access to an online follow-up class to finish roasting your turkey at home.
