■What is Soy Sauce?
Soy sauce itself is a fermented seasoning that developed in Japan, with its roots traced back to the Chinese 'jiang' (醤). Originally in mainland China, vegetables, grains, and meat were preserved through salting. During this process, it was discovered that the food would ferment and mature, enhancing its umami flavor. Today, soy sauce has become an indispensable seasoning in Japanese cuisine.

■What is the purpose of this workshop?
The purpose of this workshop is to enable participants to easily make soy sauce at home using common kitchenware, as if it were an extension of cooking.

■What will you learn in this workshop?
Learn how to prepare soy sauce at home and acquire knowledge related to soy sauce making. In this workshop, starting from scratch, we will learn how to prepare “special koji for soy sauce” and proceed consistently through the entire process of soy sauce making. Therefore, it will be a slightly longer session of 3 hours compared to a typical workshop.

■This workshop is ideal for
1.Those who are interested in fermented foods such as koji and want to try making them themselves.
2.Those who want to make fermented foods that are a step beyond what they usually make.
3.Those who definitely want to incorporate homemade soy sauce into their diet.

■The workshop will also include video recording, which will be available for viewing for about two weeks after attending the workshop. We also provide support via email or message if you have any questions or concerns about making Soy sauce at home.

■You can take home the finished soy sauce you made and let it mature for 6~12 months at home before tasting. (about 700g)
