Sunday, September 21st: Faulty or Fabulous?!
This September’s wine class will center on the vicissitudes of aesthetic elements in oenological … I mean … we are going to talk about what we enjoy in wine, and how in certain cases some ‘flaws’ are desirable!
Lots of unfortunate things that can ruin a bottle of wine. Heat damage, oxidation, and cork taint are some of the most extreme. But for every flaw (apart from corked wine, which is still potable--but nasty) we can find an example of wine making that utilizes such ‘flaws’ purposefully. You have to take into consideration not just the chemical make-up of a wine, but the balance of other elements, and the expectations said wine has in a given context.
When is oxidation good and when is it bad (think apple slices turning brown)? When do elements like volatile acidity or brettanomyces fungi play nice, and when do they ruin a wine? When does a wine tip into the realm of being flawed as opposed to being unique?
(This will NOT be a tasting of rancid or bad wine; all the wines will be fun to drink!)
