What:
A chocolate bark making workshop, teaching you the basics of tempering. You'll get to choose your favorite toppings to put on your own coconut nectar sweetened, dairy free organic Peruvian dark chocolate, to take home with you.
Bio:
Aimee Morrow started Soulever Chocolates in Seattle, WA, in January 2014. Wanting to make fancy chocolates that were healthier, she focuses on low glycemic sweeteners, high quality organic ingredients, while keeping them dairy and soy free.
She began with creating truffles, expanding into vegan caramel options, as well as bark and drinking chocolate mixes. She loves to play around with sweet and savory ingredients, keeping customers curious and anticipating what she will create next.
In 2016 she spent a month in the hills of Costa Rica working on a cacao farm, learning everything from harvesting to processing, and the many intricacies in between. The experience brought her closer to her craft, with humility and understanding for small scale cacao farmers. She harnessed this knowledge and experience to assist in the startup of another chocolate company in Costa Rica, and loves to educate through classes and workshop offerings. She will be offering classes Winter 2026 in the Rockledge kitchen, so keep an eye out for those.
