The foaming method is a major mixing method in baking that many are intimidated by. Be it dry baking or with a Bain-Marie, foams are responsible for the light, airy textures in beloved treats like Pavlova, Canonigo, Taisan Cake, Japanese Cheesecake, Orange Souffle, and Flourless Chocolate Cake — all of which students can master in this class. With a little practice, foaming can be your favorite technique to lighten and leaven a recipe.
