Panel talk with Slow Food UK & Guests: Looking back, from farm to fork

Glance at any modern food trend reports and you'll notice a theme emerging time and time again: a return to the past. ​

In the face of a challenging political landscape, it seems that consumers are craving a return to simpler times, when cooking and farming were slow, intentional and in harmony with nature. ​

Across the food industry we are seeing the revival of ancient cooking methods (e.g. pickling, fermenting, nose-to-tail), ingredients (miso, heritage grains), traditional recipes (suet puddings, bone broths) and farming practices (regenerative agriculture, line-caught fishing).

​In this panel discussion, our experts will explore how revisiting the wisdom of our ancestors - at every step of the food supply chain - can offer solutions to the challenges brought on by the industrialisation of food.

Panellists include:

• Pam Brunton is Chef and co-owner of Michelin-Green-Starred restaurant Inver in Scotland. She is also the author of Between Two Waters which interrogates the influences of capitalism, colonialism and gender, as well as our own personal and cultural histories, on what we eat. The book won a Fortnum & Mason Food & Drink Award in 2025.
• Caroline Bennett founded community interest company, Sole of Discretion, which works directly with small-scale fishers to supply consumers with ethically sourced fish, caught on vessels under 10 metres in size through low-impact methods.
