The benefits of bone broths have long been understood. During the Crimean war, Queen Victoria ordered Fortnum & Mason to send a huge consignment of concentrated beef tea “without delay” to Florence Nightingale at her military hospital at Scutari. Bone broths feature in cuisines around the world from Phos to matzo ball soup (also known as 'Jewish Penicillin') yet for a time they fell out of fashion.
In this fascinating masterclass, we are joined by the team from SPRING, who will not only explain why bone broths are very much back on the agenda but also teach you how to make them.
Founded by Tom Pryor in 2017, SPRING brought together his deep interest in eating at the worlds greatest restaurants, sustainable British farming and slurping ramen! Tom has created a collection of unique chef-grade Bone Broth's and a UK first - Bone Broth x Soup - with recipes inspired by a new generation of pioneering restaurants and chefs. Meat and bones are sourced entirely from small sustainable and often regenerative British farmers who allow their animals to reach full maturity naturally, roaming freely outdoors in small flocks and herds grazing and foraging through diverse pastures.
