Join us for Part One of GALEÓN, a two-part dinner series exploring how Filipinos navigated the Spanish colonial period through food, story, and everyday choices.
This chapter focuses on the years 1521 to the early 1800s, when colonization reshaped daily life, from religion to recipes. But within that disruption, Filipino agency endured. Each course tells a part of that story, through the ingredients that were traded, the techniques we adapted, and the flavors we made our own.
