This KCBS double-blind judged ancillary contest is your chance to whip, bake, torch, and drizzle your way to dessert domination. Whether it’s a show-stopping pie, a decadent cake, or a silky crème brûlée – anything goes in this open dessert showdown!
We want creativity. We want flair. But most of all – we want FLAVOUR.

Rules for the Dessert– COOKING:
1) The decision and interpretations of rules of this ancillary are at the discretion of KCBS Contest Representatives at the contest.
2) Entries are to be ‘your best dessert’.
3) Each team can submit only one entry. Pies one whole pie (any shape), suitable size that can be cut into a minimum 6 portions – this will be done after appearance score, by the table captain.
4) All dessert entries must be prepared and cooked on-site within the assigned cooking space. However, preparation for pastries, batters and or garnishes can be done prior to bump in but must be raw at the time of inspection. You may not use a pre-made store bought crust.
5) Every kind of fire or heat source (wood, charcoal, gas or electricity) is allowed. Electrical accessories such as spits, augers, or forced draft controls are permitted.
6) All ingredients shall be inspected by the KCBS Reps during the times established by the contest organizer. Once inspected, it shall not leave the contest site. Cooking shall not begin until the inspection has been completed by the contest reps.
7) Any desserts containing dairy products must be stabilized and kept at a safe temperature before presentation. E.g. custard, cream cheese.
8) An ingredient card shall be turned in describing the content or combination of ingredients. This will be used by the table captain to aid in the identification of allergens should a judge have a concern.
9) Turn-in will be five (5) minutes before to five (5) minutes after this officially communicated time. Late entries will not be accepted. The judging process follows the established KCBS rules of competition with the understanding that tenderness is seen as texture. This will be KCBS double blind judging.
10) Garnish is optional and open - every garnish must be edible.
11) Entries will be submitted using their own plate/board as long as it can be easily carried by one person not to exceed 18”x 18”.
12) The plate/board shall not be marked in any way to make it identifiable. Aluminum foil is acceptable as a platter cover. Marked entries or containers/plates will receive a one (1) in all criteria from all Judges and disqualified.
13) Judges may not cut, slice, or shake apart to separate pieces. If there is not enough for each judge to sample, the shorted judge(s) will score a one (1) on all criteria, and the judges having samples will change the Appearance score to one (1) as a penalty.
14) There will be no refund of entry fees for any reason, except at the discretion of the contest organizer.
15) All other KCBS rules and site rules apply to this contest.
