On September 25th, Hamilton welcomes one of Aotearoa’s most distinctive distilling minds: Lacey, the founder and force behind Dr Beak. Known for crafting bold, botanically rich gins with a conscience, Dr Beak blends scientific precision, native ingredients, and a fierce love for New Zealand’s biodiversity. These are spirits that speak with purpose—and taste like nothing else.
Lacey will be joining us in person to walk through four of her latest creations, sharing the stories, science, and sass behind each pour. We’ll be pairing the lineup with two bespoke cocktails designed to show how Dr Beak gins shine in situ—whether neat, stirred, or shaken with intent.
Expect sharp flavours, smart conversation, and a few surprises. Nibbles will be served. Feathers may be ruffled.
