Join sommelier Rasmus from FAR for a hands-on dive into the world of low-intervention wines. With 8 years in wine and beer, Rasmus will guide you through tasting techniques, vineyard practices, and what makes these wines different—both in flavor and impact.
What we’ll cover:
🍷 What is the philosophy behind low-intervention wine?
We will dive into topics such as:
- An overview of wine production
- The addition of sulfur/pesticides in the vineyard - what does it do to wine?
- What happens if you don’t add them?
- What’s happening in the wine world right now? (climate, trends, etc.)
🍷 What matters to me when choosing wine?
- How do I communicate the wine - to guests, family, friends?
- How do I approach tasting?
🍷 Tasting Technique
A hands-on introduction to how to taste wine:
- Eye – what do we see?
- Nose – what do we smell?
- Mouth – what do we taste?
We will also explore how wine interacts with food. Guests will taste food samples first, then follow with wine to experience the contrasts.
🍷 Conventional vs. Low-Intervention Wine
- What defines conventional wine?
- What defines low-intervention wine?
- What are the differences in taste and climate impact?
Who is Rasmus?
I am the sommelier at FAR and have been working professionally with wine and beer for 8 years. I completed my sommelier training in 2021 and, for the past 3 years, I’ve been curating the wine list and pairings at our location on Vesterbrogade 87. Beyond wine, I also have experience with making vermouth, schnapps, tea extractions, and hosting tastings.
