Exploring The World Of Sourdough Cultures In Baking From Bread to Pastries
A deep dive into starter culture alchemy and the world of fermenting, shaping, and baking sourdough bread and pastry - with a look into the science of sourdough fermentation to help you understand the process.
We also take a close look at sourdough alchemy and general practices on how to incorporate starter cultures into your recipes.
The class will end with a sensory tasting of some of the things we talked about and made in class, accompanied by local foods and condiments to create optimal food pairings.
For the curious int./adv. and advanced sourdough baker or the professional baker. Also perfect for those who like to open their own bakery and want to get a deep understanding of sourdough baking.
Where: Brot Bakehouse School and Kitchen, Fairfax, Vermont (in-person class)
Level: Intermediate to Advanced. Experience in sourdough baking or fermentation is required. If you like to learn the fundamentals of baking with a starter culture or please take the Level 1 class.
