I’m hosting a Beef Slaughter & Processing Workshop at my house on Saturday, Jan. 31. This is a unique opportunity to see the full cycle: we’ll begin the morning with the slaughter, skinning, and evisceration of one steer, then move to a second steer that has been dry-aging in the cooler for two weeks.
You’ll get hands-on experience in:
• The Harvest: Clean slaughter, skinning, and evisceration.
• The Breakdown: Quartering, cutting primals, and deboning techniques.
• The Craft: Identifying steaks vs. roasts, grinding, and professional packaging.
• The Gear: How to use and maintain basic butchery equipment.
Whether you're a homesteader or just want to understand where your food comes from, this day will give you the confidence to process your own.
