As we shared just a few days ago, we’re so looking forward to welcoming the beauty of winter in Esperance with a special evening of warmth, flavour, and connection.
Join us for a formal dinner celebrating Asian–Australian fusion, crafted by our very own Chef Shyama, whose roots in Sri Lanka bring depth, soul, and spice to every dish.
Here’s a look at the menu for the evening:
First Entrée
Seared Scallops with Pol Sambol & Coconut Foam
Delicately seared scallops, set against the bold heat of traditional Sri Lankan pol sambol, finished with a light coconut foam — a coastal homage with a tropical twist.
Second Entrée
Tamarind-Marinated Lamb Cutlets with Spiced Jaggery Glaze
Tender lamb infused with tamarind, chargrilled and glazed with rich, spiced jaggery — sweet, smoky, and deeply comforting.
Main (Choice of One)
Wagyu Beef with Spiced Pumpkin Purée
A slow-cooked take on rendang, reimagined through an Australian lens. Luxurious Wagyu, paired with a smooth pumpkin purée gently laced with warm spice.

Ceylon-Spiced Grilled Tiger Prawns
Juicy tiger prawns marinated in Ceylon spices, lime, garlic, and coconut milk, grilled to bring out a perfect smoky-sweet finish.
Dessert
Coconut & Passionfruit Pavlova with Kithul Syrup
A dreamy finale — crisp meringue layered with coconut cream, tropical fruit, and golden kithul syrup from the forests of Sri Lanka.
Every dish will be beautifully paired with wines from our dear friends at 3drops.
