Owner and chef, Moumen Nouri, has always enjoyed the wide variety of Moroccan traditions: the aroma of their slow-cooked tagines, the colors of the murals and rugs, as well as the sights and sounds of the market.
At the same time, he longed to discover and learn from the West. He listened to international music, learned other languages and gradually acquired a way of thinking that helped him understand and embrace both worlds.
