Martita's Lunch Box, named after founder Martha Rios, has a history rooted in El Paso, Texas, with its origins traced back to The Lunch Box, a restaurant established by Rios in 1985. Martha Rios has since retired, and her children now run both The Lunch Box and Martita's Lunch Box, continuing her legacy of serving the El Paso community.
