In Between Days, of St. Petersburg, FL, presents Yama No Sake (“sake in the mountains”), a special 5-course dinner and sake pairing led by Sake Sommelier Noah Sain, held at the historic Rochester Hotel in Durango, Colorado. This immersive evening features a thoughtfully curated menu prepared by chefs Tevin Warner and Justin Shwetzer of In Between Days, paired with premium sakes from diverse regions across Japan. Throughout the night, Noah will guide guests through each pairing with insight into sake styles, regional differences, and brewing traditions, offering a rare opportunity to explore the depth and nuance of Japan’s national beverage in an intimate mountain setting. Two seatings are available for this one-night-only experience.

About The Rochester Hotel:

The Rochester Hotel in Durango, Colorado, is a historic two-story red-brick building originally constructed from 1890 to 1892 as the Peeples Hotel, a modest boarding house serving traveling salesmen, miners, and visitors during the town’s silver-boom era. Renamed the Rochester Hotel in 1905 by Mary Finn, the property expanded further in the early 20th century and continued as an affordable lodging option for working-class travelers. Listed on the National Register of Historic Places, today it stands as one of Durango’s most beloved boutique hotels—celebrated for its timeless character, inviting atmosphere, and central location in the heart of the city’s vibrant historic district.

Noah Sain is the Head Sake Sommelier and educator at In Between Days in St. Petersburg, Florida, and holds certification from the esteemed Sake Sommelier Association (SSA) of London. At In Between Days—a Tokyo-style listening bar and one of the most sake-forward venues on the East Coast—Noah curates a dynamic selection of premium sake and leads guests through thoughtful, immersive tasting experiences. As a trained SSA educator, he also teaches certification courses and hosts the venue’s monthly “Sake Club,” fostering a community of sake enthusiasts and deepening public appreciation for the beverage’s cultural and technical richness.
