“Each Saturday, our culinary team and I create a one-night-only menu that reflects where we are in the season — the ingredients we’re excited about, the flavors we’re craving, and the kind of cooking that feels right for this moment in the year. As we move into late November, the food naturally leans warmer, deeper, and more generous, and this week’s tasting menu was written with that feeling in mind.
We’ll begin with squash — roasted delicata layered with a smooth butternut purée, finished with burrata, pistachios, and saba. It’s rich but balanced, and the kind of dish that feels like fall settling in.
The second course, chicken ballotine, is stuffed with pancetta and sausage, paired with creamed leeks, curried spinach, and crushed almonds. It’s comforting, aromatic, and full of the small details that make this season such a pleasure to cook in.
For dessert, carrot cake layered with mascarpone sweet cream, toasted walnuts, and candied carrots — a warm, familiar ending that still feels refined enough for a Saturday evening.
